Blueberry Muffins

1-1/4 c Flour

3/4 c Whole wheat flour

2-3/4 t Baking powder

1/4 t Baking soda

1/4 t Salt

1/3 c Sugar

3/4 c Skim milk

1 Egg white

3 T Honey

3 T Canola oil

1-1/4 t Vanilla

1/8 t Orange zest; grated

1 c Blueberries; fresh or

-partially thawed frozen

Preheat the oven to 425. Coat 12 muffin tins with Pam. Sift the white and wheat flours, baking powder, baking soda and salt into a large bowl. Stir in the sugar until evenly distributed. In a small bowl, beat together the milk, egg white, honey, oil, vanilla and orange zest with a fork until well blended. Gently stir the blueberries into the flour mixture until evenly incorporated. Add the milk mixture and stir just until the dry ingredients are moistened; do not overmix. Divide the batter evenly among the muffin cups. Bake on the center oven rack for 13 to 16 minutes. Transfer the pan to a wire rack and let stand 5 minutes . Remove from pan and cool 10 minutes before serving. 152 calories and 3.7 grams fat. Source: 100% Pleasure
