Pullman Loaf


It is interesting that in the English language, two almost completely unrelated things could find enough in common to be named after each other. George Pullman invented the most successful sleeping car in 1830. This was like traveling first class, today. Other than the fact that the car was long, narrow, and tall, it has little to do with the Pullman loaf. Matter-a-fact, the cars even had their own color, Pullman green-not an appetizing color for a loaf of bread.

There are other names given to this bread: sandwich loaf, pan bread, and in French pan de mie. This bread is made in a special pan that measures 4 inches high, 4 inches wide, and 16 inches in length. Unlike most bread, the pan is actually covered during baking. When the bread is finished, it is squared on all sides, creating the perfect bread for a sandwich.

One may wonder if zip-lock and bread makers got together to create the perfect, easy to make bread in a bag situation. This has been a successful venture for the bread companies. Square bread for a sandwich. With all of our technology and understanding of having a square piece of bread, why are so many companies still putting round sandwich meat on the supermarket shelves?
